There is no official recipe for these.

Two handfuls of small red potatos per persos
1-2 red onions, coarsely chopped (amount of onions depends on # of people)
Olive oil and kosher salt, freshly ground pepper

Cut potatoes into 1/4s or 1/8s.   Toss with chopped onions and olive oil.  Spread on rimmed baking sheet.  Sprinkle with kosher salt and freshly ground pepper.  Bake at 400 for 30 minutes and then reduce heat to 350 for another 30 minutes or so (or until potatoes are browned and onions caramalized and crispy).
