These were amazing – Carl thought they were the best cupcakes that he has ever had!  Found them on a recipe blog that I love but note that they are adapted from Barefoot Contessa.  We of course had to add pink and purple food coloring to our frosting.  Picture to come….

No real recipe for this but inspired by Barefoot Contessa, who is a big fan of roasting vegetables.

Preheat over to 400.  Trim ends off of asparagus.  Drizzle with olive oil and kosher salt.  Roast for about 20 minutes.

Perfect Roasted Chicken

Another Barefoot Contessa classic.  I usually skip the fennel for what it’s worth.  Still amazing and so easy.

Chicken Chili

This is one of my all time favorites.  Love making a big batch on Sunday and being able to eat it all week.  Great with cornbread (still searching for the perfect cornbread recipe….)

Herb-roasted turkey breast

This has been a Thanksgiving standby since we made it with the Rechkemmers in Charlotte for Thanksgiving 2008.  Still remember hauling Ellie and the baby swing over to their house when she was 2.5 mos old…

Spinach Gratin

Yet another Barefoot recipe.  Haven’t made this in a long time but it’s definitely worth it.

Classic Cheesecake

I have made this a handful of times (often for Carl’s birthday).  I can’t ever manage to NOT get the top to crack but it’s delicious all the same.   I usually just do berries (that have soaked in some sugar) and whipped cream on the side.
